Organic Pork Scrapple is a traditional Mid-Atlantic heritage food made from a blend of organic pork trimmings, cornmeal, and buckwheat flour. Because the pork comes from pigs raised on 100% organic feed with access to the outdoors, this scrapple is defined by its clean, savory-spice profile and a hearty, rustic texture that is free from synthetic nitrates, chemical fillers, or artificial preservatives.

Best Cooking Methods

Because organic scrapple is held together by natural starches and fats, the goal is to develop a thick, crispy exterior while keeping the center creamy and hot. 

  • Cast-Iron Pan-Frying (The Gold Standard): Slice the chilled scrapple into 1/4 to 1/2-inch thick slabs. Place them in a preheated cast-iron skillet with a touch of organic butter or lard. Fry undisturbed for 5–7 minutes per side until a deep, mahogany crust forms.
  • Oven Baking: For a less greasy version, place slices on a parchment-lined baking sheet and bake at 400F for 10–12 minutes per side. This method ensures an even crunch across the entire slab surface.
  • Pro Tip: The "No-Touch" Rule. Do not flip the scrapple too early! If you try to move it before the crust has fully set, it will fall apart and become mushy. Wait until the edges are dark brown and the slice releases easily from the pan before flipping.
