Organic Pasture-Raised Whole Chicken is the "gold standard" of poultry, representing a bird raised with access to the outdoors, a natural diet of grasses and insects, and no synthetic pesticides or antibiotics. Unlike conventional factory-farmed chicken, this bird is defined by its heritage-style growth and superior nutritional profile, including higher levels of Omega-3 fatty acids and Vitamin A.

Key Characteristics

  • Flavor & Texture: It features a deep, complex "chicken" flavor that is noticeably more robust and savory than standard supermarket birds. The meat is leaner, and the connective tissues are stronger due to the bird's active lifestyle, resulting in a firm, satisfying "steak-like" bite rather than a soft or mushy texture.
  • The Yield: Because these birds grow naturally, they often have slightly smaller breasts and longer, more developed legs and wings. The skin is typically thicker and more durable, resulting in an exceptionally crispy finish when roasted.

Best Cooking Methods

Because pasture-raised chickens are leaner and have more developed muscles, they require a "low and slow" start or a high-moisture environment to keep the meat succulent.

  • Spatchcock Roasting: Remove the backbone and flatten the bird. This allows the dark and white meat to cook at the same rate. Roast at 400F for 45–55 minutes. The skin will be paper-thin and crispy while the meat stays juicy.
  • Slow-Pot Braising: Place the whole chicken in a Dutch oven with aromatics and 1 inch of water or wine. Cover and cook at 300F for 3 hours. The meat will literally fall off the bone, and the resulting liquid is "liquid gold" for soups.
  • Pro Tip: The 24-Hour Dry Brine. Because these birds have less water weight than conventional chicken, they benefit immensely from being salted and left uncovered in the fridge for 24 hours. This season, the meat is deeply seasoned, and the skin is dried out for the ultimate "shatter-crisp" texture.
