At our farm market, we believe that the best food doesn't come from a massive industrial supply chain—it comes from right down the road. That is why we are incredibly proud to introduce our new line of fresh baked goods made with Einkorn, the world’s oldest, most unaltered ancient variety of wheat.
Our journey with Einkorn is deeply rooted in our local community, sustainable agriculture, and a commitment to food that treats your body right.
Where We Get It: Grown by Our Neighbor
We don’t source our grain from corporate distributors. The Einkorn we use is grown right down the road by our local neighbor. By partnering directly with them, we are keeping our food system entirely local. Because this grain travels just a few miles from their field to our market ovens, it completely cuts out the massive carbon footprint associated with long-distance shipping, fuel consumption, and industrial distribution centers. It’s a sustainable, closed-loop process that protects our local environment while actively supporting our immediate agricultural community.
Processed the Old-Fashioned Way: From Field to Flour
What makes our Einkorn truly exceptional is how it is handled after the harvest. Our neighbor processes and mills the grain using traditional, low-speed methods reminiscent of the colonial days:
Traditional Threshing & De-hulling: Before modern combine harvesters, farmers used mechanical threshers to separate the grain from the stalk. Because Einkorn is an ancient grain, its seeds are tightly protected by a tough outer hull. Our neighbor uses an old-fashioned threshing method to gently remove this hull without damaging the grain, leaving us with clean, whole heritage seeds ready for the mill.
The Art of Stone Milling: Unlike modern commercial flour that is smashed at high speeds through heavy steel rollers, our neighbor uses a traditional stone mill. The grain is gently fed between two heavy, rotating stones. This old-fashioned method creates very little friction and heat, ensuring the delicate flour is never scorched.
Preserving the Whole Grain: Modern industrial milling strips away the wheat germ and bran to extend shelf life, removing almost all the nutritional value. Stone milling naturally crushes the entire kernel together. This keeps the vitamin-rich germ, fiber-dense bran, and starchy endosperm perfectly intact, locking in all the natural oils, nutrients, and flavors.
Freshness You Can Taste: Because it is ground locally in small batches rather than sitting in a commercial warehouse for months, the flour arrives at our ovens bursting with life and natural enzymes.
